Soft-centred cheesecake

Cream cheese150 g
Sugar65 g
Eggs3
Plain flour15 g

Method

1Preheat an oven to 200ºC. Sift the plain flour. Grease metal cake moulds (such as tart moulds) with butter. Sprinkle sugar into the moulds and pour our any excess. Set aside.
2Leave the cream cheese at room temperature until soft. Add 40 g sugar to the cream cheese. Beat with an electric mixer until smooth. Mix in egg yolks until well incorporated. Strain to remove any lump.
3Beat egg whites with 25 g sugar until stiff. Gently fold in the plain flour.
4Pour the egg white mixture from step 3 into the egg yolk mixture from step 2. Fold until well mixed.
5Pour the batter from step 4 into the greased cake moulds. Bake in the oven for 6 to 8 minutes until done. Serve.
